View Full Version : coconut chocolate cookies recipe!!! Sooo easy!!

3 cups of shredded coconut
1/5 cup of cocoa or carob powder (alter to suit your taste)
1/3 cup of agave (depends how much sweetness you like)
1/4 cup of coconut oil
basically mix it all together, and then shape into little balls like cookies, u can either eat straight away, put in fridge or dehydrate! (not sure how long though!)
if anyone tries them let me know how they were!!

just made some then and they are delicious!! i havent dehydrated them just putting in fridge but might try and dehydrate tomorrow when i get my new machine. The trick is to make sure the coconut oil makes them stick together, but its best to mix up by hand and really pack it together into little balls rather than normal biscuit shape as they tend to fall apart like that. balls are easier!

I made something similar to these a couple of years ago. No dehydrating, just chilling in the fridge. Tasted just like Mounds bars.
Have to go find that recipe.

i have just eaten one too and very impressed! i am sure there are lot more things that can be added to the mix to make it more interesting!

I made the chocolate coconut macaroons yesterday only I messed up on the proportions. Same ingredients, different quantities. Turned out more like candy than cookies.
1 1/2 cups shredded dried coconut
1/2 cup cacao
1/2 cup agave
2 T. honey
1/4 cup melted coconut oil
Very rich and yummy. Next time I'll try it your way.

WHOA! I am so-o making these this weekend! I was a Mounds bar fiend way back when - LOL! Chocolate and coconut are a divine combo!!!

I haven't made them -- but a tip -- if you take out half of the agave and use some soaked dates in the place of it, it might help it to stick together a little better. :) (You would just FP the dates, then add the other stuff.)

I made these last night and they are good! I don't think dehydrating would benefit them because the agave doesn't dehydrate. Plus, it adds some softening benefit to the coconut. My coconut came from Living Tree Organics.
