I bought a 115 gram box of thai chilies and put it all in my blender with apple cider vinegar and celtic salt and blended it, then strained it to end up with a smooth liquid. I tasted it and this stuff is like 10 times strogner than tabasco sauce!
I was wondering, can I keep this at room temp due to the vinegar or does it have to be refrigerated?
I'm thinking it may keep at room temp since one of Juliano's recipes for pickled ginger says to slice ginger and put it in apple cider vinegar for 1 minute to 1 year (that's quite a time range lol). But after it says "Refrigerate. Keeps indefinately." but is that refrigerate it after 1 minute to one year or during the 1 minute to 1 year?
