I know about Eggplant Bacon. I have to look for a great Eggplant Parm. Maybe you can direct me to the ultimate best one. I know about babaganoosh, as recipe at this site, I read about eggplant tacos. Maybe the eggplant parm sounds best at this point. Can I freeze it too? Can I take on plane? I think now you can take food with you?
It was on sale so guess what? I stacked up. I have 8 large eggplants to use up from yesterday's store travels. I did search and find some eggplant dishes at this fabulous site. I know goneraw.com is another fav. to me. I know about Sunny Raw Cafe too..............

Caponata from goneraw.com. Loved it. Even my non-raw husband loved it, but then his Mother was Italian. It uses a whole eggplant. Keeps in the fridge for 4 days (or more?) and gets better every day.

I think eggplant is the only vegetable on earth I don't care for raw. Eggplant bacon? Yak!

I just made that eggplant lasagna, and it was terrific! One of the best dishes I've ever eaten, hands down, cooked or raw.

It took me about 5 hours to make with all the soaking and whatnot, but it was worth it, and I have enough left over for a couple days.

Ooh I love eggplant bacon. I'm sure there's a recipe somewhere around here but really I just slice the eggp thin and then put honey, cayenne, oil, and some water and salt on it...marinate...and i eat, but you can dehydrate if you'd rather have it crispy. YUM!

Ditto on Gone Raw's caponata. I have an eggplant sitting on my counter and can't wait to make it! I'm always so sad when I finish it!

Thanks for the thread. Have not really liked eggplant in any of the raw preparations to date. Will definately open my mind and try some of the suggestions. Have actually missed this in my diet, so will be great to find a recipe to appreciate again.

Well, slow to prepare and still slow so some of the eggplants, not put into the refrigerator went bad and into the trash. I still have a few more. I need to make these recommendations.
Right now fighting Trojan attacks to my computer twice in two days.
