Recently joined a CSA and am getting mass quantities of Arugula (admittedly not yet a favorite). Please help with any recipe that will help use it up/maybe grow on me to actually like it.

I use to eat it but never grew to love it. So I understand LOL

But I liked to cut it up as small as possible and eat with raisins or dates, apples or mango, squeeze of lemon juice or I guess you could add avocado and raw mayo with apples and raisins.

It cuts down on the bite.

This is one of my favorite salads. The flavor depends on the arugula. If possible tender baby arugula is best. If the arugula is a little older and tougher I might chop it up in the food processor, but that does tend to bring out the bitterness. This is a slight variation of a recipe from one of my favorite raw books, David Wolfe's "Eating for Beauty". I've made it so many times I don't need to look it up anymore. I like to eat it before special events. Hmmm, I wonder if anyone has ever thought I smelled like garlic, they've never said. It really does give the skin an amazing glow.

Skin-Saver Salad

4-6 red radishes
5 oz arugula
2-3 T. pine nuts
1 small avocado (diced)
1 small clove garlic (finely diced)
juice of 1 lemon (or less depending on size of lemon)
1 sunburst squash or yellow squash (finely diced)
1/4 bunch parsley (finely diced)
5-6 large green Italian or Sicilian raw olives (chopped)

Combine all ingredients. Toss thoroughly. I found the leftovers, if any, will keep well in the fridge for 24 hours.

OMG, I'm jealous, arugula is my favorite.
I just use it anywhere you might use spinach, though it's not neutral in taste, as you know.
I love arugula salad with a few walnuts and some fresh berries. Out of this world!

I add it to Salads and Smoothies. I grow it and Love the Flavor.

I love baby arugula mixed w/ diced avocado, dash of sea salt. Simple. Maybe add some diced cucumber. I find mixing bitter greens with fats helps cut the intensity and makes them actually taste good. This works with dandelion greens too.
If I eat "grownup" arugula, I gag from the bitterness. Try it in small doses mixed with some kind of fat and hopefully it will taste delish to you too.

I only use small amounts at once in a salad with other greens but that's good.

I agree with Loodles. Salt and fat cut the spicy/bitter taste of arugula. Avocados are terrific because they are really cooling as well as fatty. Try marinating your arugula in this dressing:
1 avocado
1/2 cup cashew mylk
1 tsp. sea salt
1/2 cup chopped parsley
Blend the first avocado and mylk. Then stir in the sea salt and chopped parsley.

Thank you all for the great ideas. Maybe with some of these to try the arugula could grow on me a bit. Will try some and post the results.
