Hi all,
Here's one of my latest creations:
meat from one tender young coconut
1/2 small pineapple
1-2 dried thai peppers(they are small and spicy)
dash of lime
few leaves of fresh basil and mint
add the following spices to meet your taste buds:
cinnamon
clove
jamaican all spice(if you have it)
green or red curry paste
fresh ginger
salt
Add water to desired consistency and blend using blender or Vitamix. This is your base.
Then place base mixture in a serving bowl and add:
Italian/summer squash( make noodles with vegetable peeler)
diced sweet potato
diced jicama
diced red bell pepper
or whatever other veggies you are drawn to
With a spoon mix veggies into base mixture. Let it sit til the flavors all merge together.
Top with fresh basil and Enjoy!:D
