any ideas for ACORN squash?

I can get organic acorn squash for 78 cents/lb. Any ideas on how to use it up?:confused:

Sliced thin in salads

Pulsed to ricelike consistency in food processor, either by itself or with other veggies. Add a little bit of oil and some seasonings.

Soup made in high speed blender (any recipe that calls for sweet potato, pumpkin, or winter squash)

I was going to say I would think you could substitute it in any recipe calling for butternut squash.
