Any suggestions for lots of strawberries and/or kiwis? I have quite a bit of both fruits!

how bout mixing them up together in a bowl and simply eating them as is... together? :D

Well, perhaps that is what I will have for breakfast tomorrow! But I still need to do something with all the rest. They usually don't last too long.

Make strawberry jam? Strawberry ice cream? A great big smoothie? Strawberry or kiwi fruit leathers? Can you freeze the strawberries for future use?

Thanks pink_berry and autumn. I did have some for breakfast and threw a bunch of strawberries and kiwis in the food processor along with pumpkin seed meal (leftover from milk) and some soaked flax seeds. They are in the dehydrator now. I hope they turn out as some great crackers.

If you haven't gotten rid of them all -

Strawberry - Kiwi Jam

2 cups of dried fruit
Unsweetned pineapple juice

Soak in juice until soft - use just enough to cover, blend and put into a jar.


Strawberry Salsa

1 cup coarsely chopped strawberries
1 tablespoon orange juice
1 teaspoon grated orange peel
1 green onion, finely chopped, top included
1 teaspoon Dijon-style mustard
2 tablespoons dried currants ( I used raisins)
2 tablespoons red wine vinegar ( I used Braggs apple cider)

Mix all together, chill and serve with your nut patties ( I used to serve it with chicken)

Strawberry Vinegarette

Ingredients:

- 5 cp. strawberries

- 1 quart white wine vinegar

- 1/4 cp. agave nectar



Requires: Three 1 pint jars/bottles

Reserve 1 cp. whole berries. Crush remaining berries. Add vinegar and agave r and stir well. Cover and refrigerate for 2 days. Place a jelly bag or a sieve lined with cheesecloth over a bowl, and strain berry mixture; do not squeeze. Discard pulp. Place 1/3 cup reserved berries in each 1 pint jar or bottle. Add juice to within 1/4" of top. Cap or cork. Store in dark cool place for 3 weeks before using. You may desire to add GSE to it for a perservative.

KiwiFruit Chutney

Ingredients
2.2 pounds kiwifruit
2 bananas
3 onions
Zest of 1 lemon
Juice of 3 lemons
1 cup raisins
1 cup sweetner ( the recipe recommeded Florida Crystals)
1 teaspoon ground ginger
1/4 teaspoon cayenne pepper
3 tablespoons crystallized ginger- made by soaking the ginger in honey and then dehydrating
2 teaspoons salt
1/2 cup apple cider vinegar

Instructions
Peel and slice the kiwifruit, chop the onions and bananas. Mix all ingredients in the blender and then place on dehydrator ( that is my modification instead of boiling) until soft and thick. Move it around frequently, and when ready spoon into sterilized jars and seal.
