we have been pretty straight out and I'm running out of ideas for quick and easy meals...I need some ideas.

what ideas besides salads, smoothies, tacos, pies, and seed candy?

I just posted a vegetable curry, it can be dehydrated or not if you wish.

The quick and easy part, is that you can make this ahead in bulk on days when you're not too busy.

My go-to quick meal is blender bisque--

1:2 ratio of nut milk base and any vegetable(s) you like. My favorites are corn or peas, but you could use spinach, mushrooms, tomatoes, zucchini, etc. Add herbs, peppers, etc. If it's too thin, put in some avocado.

Warm it if you like. It's filling, adaptable, and very quick.

My favorite blend (makes about 3 svgs):
1/2 lb frozen corn, thawed (takes 20-30 seconds in some warm water)
1 c almond milk
1 small fresh jalpeno pepper
1/4 c cilantro
1 Tbs lime juice
1/4 avocado
salt, cayenne, black pepper

Blend in vitamix till it begins to barely warm.

When I am busy, and need to whip up something quick, I do the soup and salad. Salad of course is always quick. The soup, I take out my vitamix and decide between miso soup (you can chop a few onions or spiralize and cut zucchini into small shapes if you want) or tomato dill soup (tomatoes, dill, celery and cucumbers) or gazpacho (tomatoes and basil with chopped cucumber, celery and avocado). Seasonings you can add as desired - I usually add salt/pepper and sometimes garlic.

As you get going on soups, you really can add one or two items at a time, and see how that changed the recipe. For example, instead of adding the basil to the gazpacho, add cilantro and chili powder and it makes a wonderful chili. Then just chop some carrots and celery finely and add to blended mixture. Add avocado and voila!

Also, on Friday evenings - soak some seeds or nuts and the next day, make some pate or patties to dehydrate. Pate will keep several days for weeknight dinners and the dehydrated patties will last more than several days in the frig. Then you just add a quick salad.
