This tastes like ginger ale, only better than any ginger ale you ever drank before, because it is made from real ingredients. This drink is a wonderful soother for an upset stomach, and a great digestive stimulant for those with hypochloridia (low stomach acid).
Ingredients:
3 inch chunk of fresh ginger
1/4 cup goji berries
1 cup warm non-carbonated spring water (110 degrees F)
2 cups perrier or other all-natural sparkling spring water
honey (optional)
pinch of sea salt (optional)
Blend the ginger and the warm water in a vitamix. Stir in the goji berries. Let this mixture sit overnight in a warm place to brew. Strain this mixture through a fine mesh strainer. Discard the pulp. Immediatly before serving, mix the ginger tea with the sparkling spring water in a two parts sparkling water to one part tea ratio. Sweeten with honey and/or season with salt as desired. You could also mix this into plain kombucha instead of spring water, or use it as a base for a smoothie. It works without the goji berries, but tastes better with goji berries.
