This tastes like ginger ale, only better than any ginger ale you ever drank before, because it is made from real ingredients. This drink is a wonderful soother for an upset stomach, and a great digestive stimulant for those with hypochloridia (low stomach acid).

Ingredients:
3 inch chunk of fresh ginger
1/4 cup goji berries
1 cup warm non-carbonated spring water (110 degrees F)
2 cups perrier or other all-natural sparkling spring water
honey (optional)
pinch of sea salt (optional)

Blend the ginger and the warm water in a vitamix. Stir in the goji berries. Let this mixture sit overnight in a warm place to brew. Strain this mixture through a fine mesh strainer. Discard the pulp. Immediatly before serving, mix the ginger tea with the sparkling spring water in a two parts sparkling water to one part tea ratio. Sweeten with honey and/or season with salt as desired. You could also mix this into plain kombucha instead of spring water, or use it as a base for a smoothie. It works without the goji berries, but tastes better with goji berries.

I still need to figure out how to get my hands on the goji berries locally...I suppose I'll end up ordering them online. I don't know much about them, though...

The goji berries add a subtly sweet flavor to this recipe, but they are not neccessary. I think that chopped dried apricots would work just as well.

Wow! I am sipping on this now and it's amazing! I brewed overnight to your specifications and sweetened with agave and added mineral water. Heavenly. Thank you so much for sharing. My little ones are going to be thrilled with this treat :D
