Hey all, I'm trying to find a dressing (ranch, blue cheese, ceasar etc.) that doesn't have oil in it...I'm trying a more "whole" approach : )
I want something nut-based. I remember seeing a couple recipes around but I can't for the life of me find them!
If anyone has any ideas or links, please let me know!

Maybe try replacing the oil in a dressing recipe with walnuts and maybe a bit of water if needed? They blend to a pretty liquid consistency.

You can replace the oil with blended avocado, too.

The problem is I really want something that will store for at least 3 days (You usually have to make dressings in more than 1/2 cup amounts to get it to blend) and avocado just won't make it. I'll try the walnuts for sure! Perhaps I'll just wing it, add extra almonds or something. :)

this is my current dressing that seems to last a long time!
some tahini, some raw apple vinger and some honey. blend. sorry about the proportions, i just taste along the way.

I'm interested in this thread, too. Nothing wrong with oil, but it can be expensive sometimes.

The Body Ecology Diet Book has a couple of oil-free salad dressing recipes. The are based on ACV, so I'm pretty sure to not like them, but I'm going to try a variation today. They use Xanthan Gum as a thickening agent.
