The Pancakes are in the dehydrator. The batter tasted delicious, pretty darn close to regular pancakes. The recipie came from Matthew Kenney's Everyday raw book. Waiting in anticipation of a stack of old fashioned pancakes.

so how do you like them, if they are not done let us know later. What other books do you own that have yummy recipes?

They are still in the dehydrator. The batter was delicious. Just peaked in on them. They ended up looking more like crepes. They were fluffy when I put them in. Well, I will roll them up with blueberry Jam in the middle and enjoy.

Ok, I sit eating the pancakes with much pleasure. The recipie calls for 2 cups of maple syrup. I used 1 cup and they are very sweet. They are thicker than the crepes but not real thick. They taste like freshly baked banana bread right out of the dehydrator. It took forever for them to dry, mine are still sticky. So next time I think it needs more nuts or dry ingredients. Maybe some Buckwheat grout flour or something to firm them up more and add volume and fluff to the pancakes.

I made those pancakes last week and they are one of my favorite things! I actually left the blueberries out, they dried faster that way and I prefer fresh fruit on top. I also didn't use any maple syrup so they were totally raw and the batter was the perfect consistency, nice and thick, mine stayed thick like pancakes even when they dried (although it did take 36 hours). They were plenty sweet without the syrup as well, definitely delicious!
