I've been following a mostly-raw diet for about 2 weeks now, and I've been tracking what I eat with fitday since I had some concerns about getting enough protein, calcium, B-12, the usual, and I find I'm only eating 1000-1200 calories a day. I eat whenever I am hungry, but it just doesn't seem to take much to satisfy, and I get hungry less often.
Is this ok? I know I am now eating more nutrients than I was before, even with much less food, but I am an active, 5'8", 27 yr. old and it's hard to imagine I'm consuming enough calories. Is this just a phase that happens sometimes when starting this diet?

I am eating roughly the same amount of calories... I think it is my body just adjusting to the raw thing because I have no hunger pains and I am eating way less than when I was a vegan.

Yes, sometimes you go through not-hungry phases. This morning I woke up and wanted to run for an hour with only water in my belly. Like, I really really wanted to! I could not believe this . . . I usually am a big breakfast eater.
So yes, sometimes you just won't want to eat. Make sure you stay hydrated, though.

IF you feel good I wouldn't worry about it. I went through the exercise of tracking calories at one point an found that if you aren't eating a lot of nut based recipes and mostly fresh fruits, salads and veggies it is hard to get a lot of calories in. However, I never felt deprived or starving - I felt great!
You will find that you won't have to eat as much on this diet because you are right you are getting NURTRITION out of what you are eating and when you eat a lot of SAD dead foods it is void of nutrients so you have to eat more to get satisified.
Eat when you are hungry and stop when you are satisifed. I graze often throughout the day with smaller meals. I also work out 5 days a week and I am surviving just fine. But I am however quite a bit older than you. All I can say is if you are hungry Eat more. Also if you want your calorie count to go up consume more nut based recipes and desserts and that will increase it quite a bit.

The trainer I go to is concerned that I am not eating enough calories, and that was after I posted a lot of food on her calorie tracker. Little does she know that I do not even eat all of the food on the list, because I am just not hungry, but I eat all the time. Is it true that our bodies need a minimum number of calories each day to lose weight? She tells me that if I don't eat her recommended 1200 calories a day, I won't lose weight. I really think a lot of the bloating now is due to a build up of gunk in my body...

Maybe try an enema or colonic to get the gunk out?
I find that I am satisfied with less calories, by far. My body is more efficient -- but this was not the case in the beginning. I had lots of avocados and higher calorie food. I'm sure I'm eating a lot less now calorie-wise.
