Mattye Lee's Coleslaw
4 to 5 cups green cabbage - shredded
1 medium bell pepper, finely diced
3 carrots, coarsely chopped
1/4 c. sweet onion minced
1/4 cup raw honey or agave
1/4 cup apple cider vinegar
1/2 c. raw mayo (recipe follows)
sea salt, paprika, and cracked black pepper to taste
In a large bowl, toss cabbage, green pepper, carrots, and onion. Cover
and chill thoroughly. In a small bowl, combine honey or agave, apple
cider vinegar, and raw mayo. Season to taste with sea salt, paprika,
and pepper. Pour over vegetables and toss before serving.
Makes about 5 to 6 cups of coleslaw.
Mattye Lee's Raw Mayo
Blend in a blender until smooth:
1/2 c cashews, soaked overnight
1/4 cup water
juice of 1/2 a lemon
1/2 garlic clove
1/2 tsp salt
dash or two of paprika
Add in a steady stream, until mayo becomes emulsified:
1/2 to 1 c olive oil
