I had extra sprouted buckwheat and dehydrated it. How long would I need to soak it before using it in recipes?

Once I soak (sprout) and dehydrate my buckwheat, it keeps indefinitely. I've never re-soaked it again...

Same here. I soak overnight (8-12 hrs) then dehydrate until crispy (3-5 hrs). I eat them plain or grind into pie crusts to make them lighter, or layer with coconut pudding and berries for a parfait. No re-soaking required. They're also great with some vanilla nutmilk poured on top and are like Rice Krispies, but, you know healthy ^_^ not empty. Unless you wanted them soft and squishy, I'd say soak until they feel right.
