Still haven't tryed my eggplant parm yet. I'm wondering, though, after I eat some, what is the easiest way to keep it on hand throughout the day without it spoiling? Should I put the pan in the refridgerator? Because I'd like to nibble on the meal throughout the day, but it seems like a long process to re-warm it in the dehydrator a few times a day. (Or with this big batch, I'd say I'll eat it all week. lol)
Or is it possible to just turn the D down and leave it warming all day, or will it spoil?

Here's the deal, or at least what I do. First off, I freeze half of whatever I make. The other half I do keep in the fridge and in the morning, say if this is gonna be lunch? I'll just pull it out and eat it room temp. It's not dairy, so it won't go rancid, but it IS fresh however and will spoil quicker. Make sense? I think leaving the D on all day would ruin it.

I'd freeze half; put 1/4 in the fridge and take it out after noon if you still want some and keep the rest out on the counter. Keeping it in the "d" will overdry it OR, create mold methinks.

Thanks guys! Will try that. I'm so used to eating piping hot foods, that this is such a big transition for me.
