View Full Version : I'm nervous about this dish!

So I've made my first detailed meal in the dehydrator tonight. I went with the eggplant parm in Alissa's book. Here's my problem: The cheese mixture looks fine, and it taste's ok I suppose from what I tested, but the smell is just horrible. It's that bragg's that is so overwhelming, and the smell of it about knocked me over. I never liked soy sauce before, so the thought of putting so much of the BLA in the "cheese" grossed me out to begin with, but then when I had to smell it, it put me over the edge.
It's all dehydrating right now, and should be ready in the morning. But I'm so nervous I'm going to hate it and there's two whole pans of it in my D! Ever had that experience, when something tastes ok but the smell ruins it???
All I can say is I hope it turns out and that I can stomache it, otherwise it will be a whole lot of food going to waste! :eek:

I've never made that particular dish (I don't like eggplant), but I put my dehydrator in the laundry room so I don't have to smell it. Some of the stuff really does smell vile, but so far pretty much everything I made tasted ok. Hope your food comes out all right. I tend to eat everything, even if I don't really like it. It's the whole "starving children in China" bit we all grew up with...

Well the nut cheese smelled vile before going into the dehydrator, lol. So I'm just hoping it smells better when it comes out! I agree though, I hate wasting food. I will hold my nose and eat it if I have to! :) Thanks for the reply!

The most important thing I have learned about making raw recipes that I was trying for the first time was to only make 1/4 of the recipe. I was throwing too much in the trash! I hope your recipe is a success. If not, next time only make a small portion. Best of luck!

When I first put this dish in the dehydrator I was skeptical, too. I liked it when it was done, though.

Thanks for all the replies! I'm going to try it in a couple of hours. I will definitely work on making less of a batch from now on though.

So I had my eggplant parm. The good news is the cheese did not taste how it smelled, and I didn't mind it at all. Bad news is - it was very rich for me. Definitely more of a gourmet dish, and it was just very heavy for my liking. So, since I had some leftover eggplant and marinara, I decided to make a new batch with light breading and only the marinara that is currently dehydrating. I think I'll like that much better with just the crunch of breading and the taste of marinara. It's a shame the cheese was too rich for me, but I'm putting it in the freezer and feeding it to some other raw friends. And I guess the upside is my new eggplant dish will have less calories. :)
