My Dad's all time favorite cookies are Fig Newtons. Personally, I didn't like them when SAD. On my last vacation with my husband and almost 2year old, I bought 2 packs of dried figs (they came in a circular, plastic wrapped disc).
I opened it to make a cooked meal for my husband and decided to use up the rest to make a dessert. So here's what I did:

Fig "New-ums''

Homemade Trail Mix: handfuls (didn't measure) cashews, almonds, walnuts, macademia, Brazil (used 4 - didn't need handful of these)
dried cranberries
raisins
I soaked all of the above (will try this unsoaked next time)

14 dates and 10 dried figs (soaked for a few hours)
reserve water from dates and figs

vanilla, cap full
sea salt, dash

Directions: Drain trail mix, discard water. Drain dates and figs, reserve liquid is added to processor in tablespoons until mixture is smooth. Put ALL ingredients in processor and process (next time I'll leave some nuts and dried fruit whole for texture and mouth feel).

Spoon dollops (about whole, unshelled walnut size) on Teflex Sheet and dehydrate until firm but soft (mine is still in dehydrator since 2pm today @ 105deg). They taste reminiscent of Fig Newtons but doesn't gross me out as much! The SAD cookies are grainy and taste fake. My RAW version doesn't taste fake even though I can feel the seeds of the figs. My 2yr old tasted the "batter" before I scooped them onto the sheet. She didn't spit it out like she does anything else I give her, so that's a good sign that she'll eat these. YAY!

They sound really good. I love figs, but never really liked fig newtons either, because they taste floury to me. I might just try your recipe some day when I want something sweet.

I'll know how they tasted in the morning, that's when I'll take them out of the dehydrator. I'll post the results.

I have pictures which I'll post later (can't find my USB cable!) The results are outstanding, I'm shocked that it worked so well. They are delicious, I think figs are now going to be a staple! I think I'll make 2 adjustments next time, 1. add more texture for a better mouth feel, and 2. spread the batter to form bars, which I think may cut down on the dehydration time.

Otherwise, if you loved Fig Newtons, I recommend that you try these (well, even if you didn't like them - like me, still try them, you'll be surprised!!)

Ooh, I LOVE dried figs! I'll bet one could come up with a raw crust too for the figs and dry the whole combo...I ate a bunch of Fig Newtons as a kid!
