I'm hoping someone can answer this question for me. Is it ok to make an abundance of green smoothies to last for maybe 2-3 days or should you make them fresh everyday?

Ideally fresh or not more than a day's worth. But really just do the best you can. It's certainly going to be better than any SAD food. If using jars you would just shake them up prior to drinking. Soup seems to last even better than smoothies and you can add greens to those as well.

It is better to have them fresh as they will begin to oxidize and some nutrients will be lost. Sometimes that isn't possible though, so whatever works to have them is best. But, don't try to save them if they are made with blueberries! They naturally gel and turn into a thick glop. I did it once and it wasn't appetizing!

I also do not do more than what I will use during the day, the longer you let your stuff sit the more nutrients are lost. I will do my days worth and then store in the fridge in a glass container. Also things with kale or cabbage really do not taste good if you do more than the same days worth.

I dont like the way they look after even a little while so I just whip them up at will. Unless you have a reason for needing to make them up in advance I would just go from blender to mouth.
