View Full Version : Dehydrated Potatoes?

So I just put a batch of potato chips in the dehydrator and then looked online and I read all this information about white potatoes being harmful if eaten raw because of some sort of toxic chemical in them. :eek: So my question is - can I eat dehydrated potatoes or should I throw the batch away? Alissa has a recipe for potato chips - does the vinegar neutralize the toxin?

I would not worry and eat them. I have eaten them before and I'm still here.

I eat Alissa's salt/vinegar chips all the time.. Don't think there's a problem.

Yes that's the nature of the potato. So slice them as thin as you can. Also make sure you soak them in water for a while. Dehydrate at the highest level when you first put them in, then turn it down.

You have to store potatoes in the dark. If they are in a light area, they turn green. It's the green part that contains the toxin. If your potatoes have green areas, cut those parts off. I used to eat raw potatoes all the time when I was a kid. I'd steal potato pieces when my mother cooked. (So did our dog.)
