I am just in the process of my first ever sprouting attempt. I soaked 1/3 cup of mung bean seeds for 8 hours.... I have been letting them sprout for about 3 days now. They are growing, but today I noticed that some of them are turning purple... is that normal or are they going bad?

I have had a slight pink in my sunflower sprouts and ate them and enjoyed them.
I would go by the smell. If they small good thay are good.
I agree with sport on the "if they smell good, they're good"! LOL...
As for the mung sprouts, I usually put them in the fridge on the day they start to get the pinkish/purplish tint.

Be sure to rinse, rinse, rinse. Any sprout needs to be rinsed a LOT!
