As a side bar, I am hoping that if I post enough, I will morph into the raw vixen I am destined to be....
On another note....
You know what I fear I will miss the most? I LOVE to go out to eat with my friends, experience different atmospheres as well as cuisine. Any suggestions on how to weather this????
Also, I think it would be so fantastic to get to a place where I could create my own "ethnic" environment, inexpensively, in my home, just for fun, on days when I am wanting to do things a bit "different", and just well, different ; ).

There is a ton of ethnic in my book from pakoras, samosa's, Indian spinach dip, mango lassie to enchiladas, Spanish rice, chili, refried beans, nachos, to calzones, pizza, cannolis, lasagna to, hamentaschen, rye bagels, to crepes to pad thia, kim chi and then the standard American stuffed mushrooms, burgers, meatloaf, turkey, poptarts, potato salad, cakes and cookies.
I think ive covered a lot of the basis :p
Here’s a kim chi recipe, its sooo good and easy!

Kim-chi

You can often buy this popular dish raw and without sugar…but it’s just as easy to make and it’s much fresher! Eat this Kim-Chi as is, serve over burgers or loafs, or use in collard or cabbage roll-ups to spice up the dish!

1 medium to large sized napa cabbage, shredded
2 cups carrots, shredded
1 /2 cup red bell pepper, diced
1/2 cup shredded onion
1 Tablespoon apple cider vinegar
1 Tablespoon ginger, minced
1 teaspoon honey
1/4 teaspoon red chili flakes (or more if you like it really hot!)
1 Tablespoon sea salt

Mix all ingredients together in a bowl and allow to sit overnight or at least a few hours for the flavors to mingle.
