Raw pistachio recipes anyone?

I just bought a lot of raw pistachios from my organic co-op and have no clue what to do with them, other than just eat them plain.

Anyone have any recipes that they would like to share?

I was just in Fiddleheads (a health food store in Ontario) they have a smoothie bar there and there most popular smoothie had pistachios in it
I had never thought of putting them in a smoothie - it was green but something else in it gave it a bit of mocha flavour - it was awesome

Key Lime Pie
Blend 1 part mashed avocado, 1 part pistachios, 1/2 part lime juice, 1/2 part raw honey, 1/2 part melted coconut oil, and a pinch of sea salt. Pour into a raw pie crust and chill for a few hours. This is delicious! But you really need a great blender like a vitamix to get it smooth enough.

In a cooked food restaurant once, they served meat that had been coated with powdered pistachios and grilled. You could make a raw version! I bet that marinated raw veggies coated in powdered pistachios would be delicious.

Almost forgot! You can add pistachios to your favorite raw ice cream recipe to make pistachio ice cream.

my favorite treat, though be careful not to eat too much...:

pistachios seasoned with agave/honey and sea salt. It's soooo delicious! same with walnuts..

I have been looking for unheated pistachios (most are dried at high temps, like walnuts). Do you know where your co-op gets them?

Wish I had a raw recipe for the Italian pastachio cookies I used to make. They are a wonderful layer in RFRW's lasagna recipe.
