I haven't really ever been keen on coconut, young or mature. I can handle small amounts, but generally it's just too much. Two bites and I'm done
Today, I drank the ENTIRE COCONUT full of coconut water! I've been reading all about the electrolytes and goodness of coconuts, and when I was cleaning my fridge, I found one I hadn't eaten. (I blend the meat/water with half a pineapple for my boyfriend, who is addicted to these raw Pina Coladas!) On a whim I started chopping away a very small spot of mould growth from it sitting in some moisture. I kept cutting, don't know why, and soon I was down to the hard husk. I kept cutting until all that was left was the flat bottom, and easily used the sharp edge of my hammer to quickly, easily, and quietly make a hole in the top. It was like the coconut did it itself! Ha! And the husk peeled away so easily from the meat, that I had just a water-encased circle of coconut meat (just at the top where I chopped). It was the best coconut I've ever tasted.
That coconut shell is going to be turned into a rattle for my healing work. I guess it seems like not a big deal, but it was a really neat experience!
