It seems that all dates are not created equal. I see there are many types. Does it make a huge difference which ones I use? I was thinking of trying the chocolate mousse recipe.

In recipes I don't think there's a huge difference. Medjools are the most popular, but really you can use any. Some are more moist than others and probably work best.

I don't know what Chocolate Mousse recipe you are thinking of using ... if by some chance it is the one I posted sometime back. I used plain old pitted dates (you know, the cheap ones).

They all have different flavours and textures. I love medjool dates in recipes because they're creamy and malleable, and have a nice strong flavour. There are some that have a honey-ish flavour, some that are more mild, and some that are rock hard and aren't good for recipes unless soaked a long time.
Try different flavours and packages. Medjools are expensive, but I sometimes cut them with other less expensive dates. Really it's up to preference. The wonderful thing about raw food is the variety, even when following the same recipe! :)

I have a hard time finding them at stores & when I do there is usually only one option so that's what I get. I don't think there would be much difference though.
