View Full Version : Slimy baby carrots.

Does anyone know what causes these? I've been buying organic baby carrots at Costco. Was buying the big box of individual packages. Didn't have much problem with them but would have an occasional pacakage that was slimy. They haven't had the little packages for several weeks now so I have been buying the huge bag. The carrots always go slimy on me before I have eaten half of them and one was slimy from the start! Now I have some little bags that I got at Safeway and the same thing has happened. Slimy carrots! I thought it was the accumulation of water on the carrots and always look for bags that look dry inside. But some of these little bags are not sealed properly so they are open on one end. I wouldn't think moisture could build up inside. If I touch another slimy carrot I'm gonna scream!
And yes, I know they're not really baby carrots. But to me they taste better than the big carrots which can sometimes be woody or bitter. And they're easy to stick in my daughter's lunch.

A: We went to Grimmway Farms, which produces baby carrots, to get your answer. Grimmway says the slimy condition is usually the result of inadequate refrigeration somewhere in the distribution chain. Grimmway injects a small amount of tap water into the carrot bag to keep the carrots moist and fresh. It says if the carrots are not kept cold, they will turn slimy. However if the carrots are stored at 33-to-40 degrees, they should last 4-to-5 weeks without any problems.

I had the same problem with a large bag of baby carrots that I bought from whole foods. It was right after hurricane ike and the store had probably been without lights for a day so I didn't think it was a big deal but the carrots were horrible. I threw the whole bag in the trash. I was going to just take them back but the store is all the way on the other side of town (like a 45 minute drive). Anyway, now I'm constantly checking each and every bag that I get because I'm afraid of getting another slimy bag. I check them at the store by grabbing one of the carrots and sliding the plastic side of the bag against the carrot that I'm holding. I can tell by the way that the plastic slides on the carrot if it's slimy or not. I hope that this helps and since I've started checking them at the store, I have not had another slimy bag since.

Also mold can do this. How do they smell?

Slime means they are going BAD. That is what Carrot Juice does turns into a "Big Slime Ball"
