didn't want to start a new thread for each, but 2 things-

for all you folks with Excaliber Dehydrators- I have been busy developing some raw candy and in the process of taking notes on each batch, I noticed my dehydrator is way off the mark on temps. I have a meat thermometer with a probe and I rest the probe on an empty shelf and just watch the temps to make sure I am between 100 and 111 or so- well the 110 mark on my dehydrator is more like 125 degrees=(

I did double check the probe in ice water and its correct. I have no clue if I can get a different thermostat - its been a year, so probably not.

so just an FYI:)

the other thing is today I came home to a 11 pound box of dates I ordered from a grower called Harry's Dates. I was surprised at the price- with shipping, 11 pounds of fancy Medjools was 43.00! I was expecting the same ole dried up dates I always see at WF or whereever, but this box was stuffed full of the most lucious dates I have ever seen. They were SO BIG and so soft! Plus they gave me 2 extras- some other sort of date that was dry and pitted, and 10 pieces of some yummy date almond rolls.

wow, those dates sound delicious! sorry, i have no advice on the dehydrator--i don't have one yet! hope you find a solution soon...and enjoy those dates :)

yeah about the dehydrator. i use to have an excalibur and i was very wary of the temp. myself so i did the same...put my own thermometer in there and found that the temp was WAY to high. you have to keep an eye on those things they dont keep to the temp you want. if i recall i had to set it REAL low to keep it about 110 deg. but i always kept an eye on my thermometer.

and YEAH! this is the time of year for REALLY fresh dates! so enjoy them i found some REALLY soft juicy ones at my costco.... they are comming right off the trees about now. YUMMMM !

Your excalibur should be on warranty? Yes?

Dates - love that natural candy. Love 'em with a Brazil nut in the middle!

Excalibur only does a year warrenty=( anyway,I have heard this complaint about the thermo a few times. I think I will wait and see what yall think of your new Good for you dehydrators- if the candy takes off,I will need to buy a few more!

so I knew little about dates before going raw , but I suppose buying at the correct time of the year and from the grower helps=)

i am just wondering here- how good are dates when it comes to pesticides? i have heard dried fruit has a higher concentration if inorganic.. :confused: I am curious how badly they treat date treas

On the dehydrator - the instruction book points out that the air temperature in the in the dehydrator is higher than what the food gets to. Check it out, it's a few pages back where they discuss why an excalibur is great for raw foodists.
