I read in another post that if you eat fruit with fats it somehow slows down the rate of sugar absorption. Anyone know how/why this is?

I'm not sure why, but it's true. That's why I add some oil or nuts to my green smoothies. Today I made it 5 hrs before needing to eat again! I did "milk" my smoothie for about three hours though...meaning I kept sipping, sipping on it. I only put in about 5 walnut pieces though.

I suggest if you want to learn alot about the mechanics of the food and exercise to pick up a copy (I got mine from the library) of The Thrive Diet by Brendan Brazier. I think he mentions the fact that fat slows down fruit digestion and keeps you from getting as hungry, but I couldn't locate it for you, sorry.

On the other hand, fruit digests in about 20 minutes, so anything you add to it slows down its digestion.

Fat delays the absorption of carbs. Sugar is a carb. Why is this? I don't know. Perhaps fat slows down digestion.

True, if it's eaten mono.

If you add fat, it slows down it's digestion.

Well there is two theories about this. G. Cousens advise to eat some fat with high sugary foods to avoid it to affect the blodsugar (and is only recomending lowglucemic fruits anyway).
Doug Graham says a bit of the same thing, but that we should not combine fatty foods with fruits. the thing is that when the sugar enters the blod the insulin shows up. The insuline attach itself to the sugar and transport it into the cells. But if we ate fat, then fat will make a layer around the cell and then the insuline and sugar cant enter the cell. Witch as a result will give a raise of sugar in the blod. We all know what that means ;)

My personal experience is that Doug Graham is right. If I combine sweets and fats, my blodsugar goes nuts.

Both of them are speaking from science, but I have no idear who is right.

I agree with that. I like to have the fruits digest quickly so they don't start fermenting in my stomach (burps/gas). Unless you have problems with blood sugar/insulin levels why add fat to fruit. I do like to add a small amount of fat to a green smoothie, lately chia seeds. It makes me feel full longer and it may help with the absorption of fat soluble vitamins. Usually when I do mix just fruit and fats it's in a dessert recipe using a dense fruit like dates. Once in a great while I like to have a mango/avocado salad.

Adding cinnamon to your fruit will also slow down the absorption of the sugars.

I have had trouble with digestion (gasssy, upset stomach) when I have added coconut butter to my fruit or green smoothies, so I don't do that any more. My system is sensitive though.
