View Full Version : Carrot Cake with Cream Cheese Frosting-kid fav!

Here's what I've been doing for breakfast and the dc LOVE it. I make a double batch of the cake and a single batch of the frosting. The cake recipe below is for 1 batch, but with my bigger fam we double it.

Cake:
1c nuts (almonds, walnuts and pecans work best)
1 c dried fruit (we prefer raisins&apricots-apricots give a buttery taste?!?!?)
5T of sweetner of choice
1T cinnamon
1t ginger spice
1t vanilla
2 carrots shredded

Blend the nuts into a rough meal. Add dried fruit and other ingredients. Blend in FP. Press into pie pan or square pan.


Lemony Cream Cheese Frosting

2c nuts-soaked at least 2 hours, but overnight is best.
4T of dried fruit-soaked
juice of 1 lemon (use less if you want more of a vanilla flavor)
1t vanilla
1T agave
2T of coconut oil
2 dashes of salt

Blend. Add to the top of the cake a fridgerate for 30-60 min+.

My dc have been eating it like CRAZY. it's very filling and very high in fats. I usu eat 2 bites-literally. They can eat 1/4 of the pie pan!

here's a tip: I made the cake part the night before and put it in the fridge. It takes about 10 min. to make. Then I soaked the nuts and fruit together overnight and whipped up the frosting in 5 min in the morning. Or you could make it the night before-IF you can remember to soak the nuts first thing in the morning, ya know? I always forgert that part so I have found this easier.

Is the amount for 1 pie plate (like you show in the picture) double the recipe you have posted? Or did you make 2 pies?

1 batch is enough to cover a pie plate, but it's thin so you need like 1/4 of the pie plate to feel full. So I doubled the cake recipe so that I could serve 8 portions instead of 4-AND I only need to make 1 recipe of frosting so that saves me 2c of nut$ everyday. The pic is of a double batch of cake with a single batch of frosting. I know most don't have a biggish family like mine so I posted the cake recipe as a single batch. Gosh-I hope I'm making sense here! :o:p

I could never stop at two bites and had something similar last night at our rawluck. I'm waiting to see if this person will share. It was divine and tasted like cheesecake. I don't think it had crust, but a jam stuff on top. It was fabulous.
