Oh. my. sweet. yummy. delishessessness. Got this recipe out of Sergei and Valya's new book Fresh.

peel and cut a watermelon into thin strips. (I cut mine into chunks). Pour 1 c of lemon juice over the watermelon. (I used 1/2-3/4c). Put in dehydrator overnight at 105 (12+ hours). You have natural and healthy "sour patch kids" candy.

I'm not kidding. Too bad I didn't know about this when watermelons were practically free...

You should probably make about 3 batches at a time. 1 is an unfair amt and you will spend lots of time and energy trying to leave some in the "d" for a final product.

Oh LAWD, I have a watermelon waiting to be eaten right now - I know what I am going to do with it!

Zaphirah, do you know how long it will keep?
I might try to go to town with a bunch of watermelon (that's not tooooo expensive here yet)...

Thank you so much for posting this - I am sure the kids are going to go nuts for this. My 3 year old was just asking me to make watermelon fruit roll ups but I wasn't sure it would work because of all the water content in the watermelon.

I am so psyched to make this! :D

LOL I have two 15 pound watermelons on my counter. I had forgotten about dried watermelon - never tried it with the lemon juice, but that sounds fantastic... Need to wait a day or two until it's not so hot - too hot to run my dehydrator right now, but YUM! Thank you!

Are you implying that we have no will power and cannot keep our fingers out of our dehydrators? :D I have never ever taste tested anything before it was done

Tried this in my car. :( It wasn't hot enough I guess, nothing dried out all of the way. It was slimy.

I had to leave mine in the dehydrator for about 24 hours. It ROCKED! uh, the pics aren't all that inciting, tho.
