I have seen ani phyo's book and I know she has a polenta recipe. I remeber it had corn and cashews, but I am not sure what else. Any ideas for raw polenta?

Polenta…Ani’s recipe and credit with link listed below. Her book is great raving reviews. Check and see if Alissa has something going in her book. However, here's Ani's Polenta recipe:
Polenta, Ani, "Raw"
it's 1 cup almonds (macadamia, cashews or any combo), 6 dates, 1" of vanilla bean, pinch of salt, ground in the vita-miz, adding agave (up to a 1/4 cup) until you get a spreadable consistency.
press the mixture into a tart shell and refrigerate for at least an hour (longer is better).
Searched and found that Ani does have polenta recipe in her book.

jenny, these are great, what I like best is they keep for a bit so I can take them to work, munch on the road on them, even my non raw friends like them. I changed a few ingredients from the book in this recipe, it’s my take, but if you get a chance get the book. Their recipes are all divine, but just be prepared to work and spend some time in the kitchen. I did their raw polenta with wild mushroom ragout, spicy corn soup and chocolate geleto for a dinner party and I was in the kitchen working for six hours!! LOL I made their dragon flax seed crackers and I cannot keep them in the house because my friends keep wanting bags of them home!!
I'm thinking perhaps Carmella may have one recipe at her Sunny Raw blog or even goneraw.com if Alissa's book doesn't.

Thanks for the info. I am not sure if that is the polenta recipe though, I know it had cashews and corn and your recipe sounds like a sweet cream. :confused:
I checked goneraw and carmella's site. Alissa has a cornbread recipe that is modifiable. It is very sweet as is.
I will wing it with corn, cashews, salt & pepper.

Gosh, no corn is right now that I looked at recipe again. You could add corn into mixture however. Not sure if Polenta does actually have corn in all of them. I'm not a polenta girl so can't speak on that behalf. Let us know what you come up with.

Stole this off someone's site, who reprinted it from Ani's book--
Polenta
1 1/2 tsp sea salt
1 clove garlic
1/8 tsp ground black pepper
1 1/2 cup cashews, dry
2 cups corn kernels, fresh or frozen
Juice of 1/2 lemon (about 1 tbsp)
1 1/2 tbsp yellow onion, chopped
Process first 3 items. Add everything else but the corn, process. Add corn and pulse.
