Sundried tomatoes are so good that I could practically cry for joy while eating them. Yum! :D

sometimes i get some that are SO YUMMY and sometimes i get some other brand and they disgust me :( it doesn't seem like anything extra is added.. :confused:

I love Mariana's sundried tomatoes (no salt, no preservatives, no sulfites added). I also adore the sun-dried tomatoes from www.rawfromthefarm.com .
My favorite way of preparing sundried tomatoes is to soake them in water overnight, then put the soaked sundried tomatoes in a jar of olive oil. I also add sea salt, basil leaves, oregano leaves and dried chili peppers to the olive oil. I let this sit on my counter for about a week. Then I begin using the flavored oil as a salad dressing. When I run out of oil, I eat the delicious tomatoes at the bottom. Bliss!

I've never had the store bought kind, but I make my own. Yes, they are so DARN amazingly good. I even got my tomato-hating hubby to love them!

I am! I soak them in a bit of olive oil, and some basil, oregano, the usual italian spices, let 'em marinate, then put them in the D for about 8-12 hours. WONDERFUL in sauces or V8-like concoctions.

*sigh* all you people with dehydrators are making me jealous . . . I want to be able to capture the tomato goodness from my garden and save it up for the winter months!

I make my own sundried tomatoes also. I use all the extra tomatoes that hubby grows in our garden and dehydrate them for eating in the winter. They are so divine!

rawstrength--I just wanted to tell you that I made this over the weekend and we tried the tomatoes yesterday! They were awesome! I used a mix of basil, oregano, thyme, marjoram, rosemary, garlic and onion. I can't wait to use this on salads and Mr.Liza's pasta! Any time oil is called for in a recipe, I'll consider using this. It's deceptively simple, because the flavor is very rich. Both oil and tomatoes come out really pretty, too.
Since I used 2 partial bags of tomatoes that were getting a bit hard, I ended up with about 3 cups of solid matter. After adding oil, I have almost a whole quart jar full, so I put it in the fridge, just in case.

Yes, even though the olive oil gets a bit "crusty," I figure I can spoon out what I need and let it come to room temp in a bowl. The tomato halves have continued to absorb oil (after 20 hours soaking in water!), so I'm going to add a bit more and also some red pepper flakes, cuz I forgot them before. I'm getting hungry just thinking about them!

I only started doing this last month! I've been keeping them in a jar in the fridge. I don't know if freezing would work. :confused:

FABULOUS marinara you posted. I made it tonight. Of course no plans to dehydrate, but is absolutely fabulous. I had some Italian seasonings and added those as shared and fresh basil. I didn't have oregano, but man alive I was in heaven and back. My husband made it point to compliment this too. This is our new staple on all dishes including salads.
