hey all,

just wondering if all tahini is raw? lots of alissa's recipes call for it (plus i love it!), and i've seen it at the stores, but have no idea if it's raw or not (doesn't say it's raw, and the ingredients just list sesame seeds).

do you guys make your own tahini? if so, do you just use a food processor?
or do you buy it, and if so, do you have to get one that proudly proclaims "raw"?

I'm sure there are small companies that make it raw--but it's my understanding that the marantha brand is not raw.

In case it's helpful info -- I can never get it as liquidy or oily when I grind it myself. It's more like a firm powdery gel. LOL, well that wasn't much of a description... but it's oily and gooey when I buy the (raw) jars, and not when I make it at home in the coffee grinder.

Me too. I'm guessing either (a) commercial places add quite a bit of sesame oil to the sesame seeds or (b) the seeds we buy don't have so much oil as the seeds they use.

Artisana label is showing up in a lot of stores in my area. (Alissa sells the Artisana Goji Bliss, btw:heavenly.) Artisana makes an extensive line of raw nut butters, including tahini. I have a jar in the fridge. The label says it's raw, and it tastes raw.

Oooo, love tahini! The best one so far that I've discovered is by Rejuvenative Foods (http://www.rejuvenative.com/tahini.htm). Mmm-MMM :) ...it's usually kept in the refrigerated sections of most HFS.
