Even though I was a bit late for the challenge, I wanted to try 100% raw for at least 30 days, but my god i can't seem to abide by any of the bread recipes I've tried. I have cut out flax, added it back in, tried different spices, etc. But all the bread and crackers I make have a bitter under taste. Like something has gone rancid. Which I don't think can be, I use fresh flax, seed and nuts and veggies and herbs.

My advice? Then don't do "bread" type products right now. Do kale chips. Do crunchy salads. Keep it simpler...
Maybe your taste buds have not gotten "there" yet. Some things in the beginning I did NOT like, but now love them.
Be patient...

I should probably add that bread was a huge staple for me, and suddenly cutting it ( or a reasonable substitute) out completely might not work. Already adjusting radically from one food lifestyle is hard enough but to ease the transition everyone tells me to find some thing similar.
But I appreciate the advice!:)

Have you tried making the ritz cracker recipe? I really like it as sandwich bread and croutons.

Now, imho they are not actually anything like ritz crackers, but I really like them=)

I also use other things in place of bread-

romaine leaves
butter lettuce leaves
collard leaves
a big bell pepper cut in half and seeded

I used to eat lots of bread myself, but may as well jump in with both feet. Actually it was either the bread with yeasts or the Rice Dream ice cream ingredients that caused Acid Reflux to me for a short season and now HISTORY! I went to chiro. who tried to fix me up, told me I had some allergies, but didn't fix my problem. I did.

My husband also used to eat tons of breads. He's overcoming candida with acupuncture and a small cleanse he did for about 3 months...can't remember name..he wouldn't remember....from health food store....one month...do one...next month...the next part of this series...last month...last part of the series...

your crackers: Any salt in there? What veggies: Tomatoes/celery were my stapes plus flax seeds....pinch salt....onion sometimes....sometimes basil too....that was it before I dehydrated...always tasted my "batters" before making.

Good luck at what % raw you decide on. Change is never easy but the right change is worth the extra effort. We're here for you! With my clothing looking great on, my inches coming off and my workouts at gym with Turbo Kickbox, see website for testimonies plus weight training, it's worth the efforts to eat as best as I can besides aging. I do eat a pinch of cooked when I get the "bug" for it, but I'm not hung up on that either. I feel great and most days 1005 raw however.

I'm on the GS challenge right now and doing a smoothie per day. It is a 14 day commitment, but at this point lost track of time and may be coming closer. Still I committed to the running the race and winning at my speed!

Medusa--I posted on your blog, twice. :o And here I am again.

I think the ritz crackers have a bit of bitterness to them. I actually like it, it's from walnuts, I think. One of my friends said they were horribly bitter. I wonder if you are extra sensitive to bitterness. Maybe you can taste it more than we can.

Anyway, I order these crackers (http://www.rawveganbooks.com/product_info.php?cPath=100150_100148_100216&products_id=1001422) from Raw Food World (check out the other 2 flavors as well). I love them! They are very crackery in texture and I never need more than 1/4 to 1/2 of one (they are supposed to be 1 cracker per serving). They are expensive and you pay for shipping on top of that. But they do me. I haven't made a bread or cracker yet that I'd make again, but I'm going to keep trying. Meanwhile, I have these.

I have liked all the crackers I've made but never found a bread substitute. My daughter has hated everything I've made with buckwheat so I tried sunflower seeds instead and we both like those.

I agree with this!! I always have some in the house at all times, and make his tostadas on it frequently. mmm! I also love putting Alissa's 'swiss cheese' and tomatoes on it too. SO good!

I feel you on the bread. I tried the onion bread and it was not pleasing to my taste buds. I put it back in the dehydrator and it wasn't satisfying at all.

Maybe buying some flax crackers, while not cheap, might help you through the process. I've made the raw flax crackers in the past with no issues at all, even with flax that i had for a while (but stored in the freezer). You need to check all your seeds and eliminate any that might be rancid before using them, too.

Also, when you soak the flax, you don't have to soak it for long before it is ready to be used.

I was a major bread-eater before I went raw. I decided to never eat bread again, not even raw bread, because I knew that raw bread just wouldn't be able to compare.
9 months later, I can barely even remember what bread tastes like, and the thought of eating bread is about as appealing as the thought of eating sand.
If you eat what you're craving . . . you feed the craving.

I make flax cracker s like this:

Ground up the flax 80% grounded up 20 % whole with a bit of salt. Then soak them in just enough water (maby double up water). Let them soak for 30 minutes to an houre. Spred on dehydrator sheets (I use brown parcement paper) and dehydrate for 12 houres (you might need to flip them over after 7 houres or so). I love thies. They taste almost like the ryebread that is a stable foods here in my country. You can eat them with anything; sweet or spicy.
Mine dont come out bitter, maby like already surgested your seeds are rancid ? I dont ad any spices or vegies to my "breads" as I like them plain so they can be used for more. Maby it is the spices or vegies that gives them a bitter tast ?
