i'm wondering about melon seeds...i'm living in spain right now and have been getting some melons...i think they are christmas melons, but i'm not positive. anyway, i don't have my vitamix or a blender here and i'm wondering if i can just soak the melon seeds for awhile and then eat them?! (they are really, really tough without soaking.) any thoughts? i hate to throw out perfectly edible seeds!

From what I just googled, seems as though it would be okay to do so. Although a lot of the info said the inside (kernel) would be way more nutritious then the harder outside. Have you tried cracking them open and eating them? Have you tried sprouting them? :confused:

I would recommend sprinkling them with some salt and laying them out on wax paper in the sun to dry. Then you can eat them as you would sunflower seeds, by cracking open the shell and eating the insides.
You are so lucky to be in Spain! Where in Spain are you? I spent 5 weeks in Barcelona a few years ago.

I was in a local Asian market yesterday and saw watermelon seeds! Packaged along with the pumpkin seeds etc.

Found a picture along with a device to help crack them open :)
