View Full Version : Hubbard squash, hard squashes - ideas needed

I know I could make a blended soup with some squashes. I don't normally do this.
Yesterday opportunity to buy at Farmer's Market a LARGE hubbard squash and refused the great bargain for lacking what to do with it. I was thinking I would love to make strips for pasta in dehydrator.
Got suggestions to possibly satisfy the squash? I think I heard high in carbs so not much desire knowing this ir making often. However, it's available cheap so thoughts are here. Wonder if all squashes are high in carbs?

Don't worry about the carbs! All squash is high in carbs for a vegetable but they are low glycemic and have lots of fiber and don't impact your blood sugar much. Here's a yummy recipe:
Juan's Tacos Flacos (Skinny)

Makes 4-6 tacos
This nutless main dish was named after my good friend’s EX-husband…......

Ingredients
1 cup butternut squash, cubed, I used the pieces that were left from spiralizing for another meal, I have also made this with yam and carrots
½ red bell pepper
1 teaspoon each ground coriander and cumin, possibly more-to taste
pinch each, salt and cayenne pepper, possibly more-to taste
1 tablespoon olive oil
1 large tomato, diced
2 tablespoons cilantro, minced
3 green onions, sliced
½ clove garlic, minced
½ lime, juiced
kernels from 1 ear of corn, optional
salt & pepper, to taste
avocado slices or your fav guac
collard green leaves, 1 per taco
Preparation
1. Using a food processor, process squash and red pepper until finely minced. If you don’t have a processor, a grater would work.
2. Mix in coriander, cumin, olive oil, salt and cayenne. Taste and adjust seasonings.
3. Mix tomato through corn to make pico de gallo (a fresh salsa for topping). You can add a little minced jalapeno or serrano chili for a little extra heat.
4. To serve, divide squash mixture among collard leaves, placing in center.
5. Top with pico and avocado slices or guacamole.
6. Enjoy!

Thanks bunches. Love the word "skinny" in your post.
Have it saved now. Looks easy too.
Now I just need to find the squash at my favorite Farmer's Market where even the "meat" heads just love ALL my food they told me the other day. It's all raw and simple as well. I suppose they need a personal chef to help change their habits if they wish. Not me, but maybe another person.

"Machette", but watch those hands...amazing it chipped away at my hubbard, cleaned off the machette then and I am happy. Hope it helps someone else.

The Machette chips away at the squash like a hammer trying to break down wood logs. Squash even went flying in the kitchen every which way. HA!
