If you miss peanut butter, this will take care of your cravings. It contains no peanuts and is realatively inexpensive to make :D .
I use frozen nuts to prevent this from heating up too much while it is being blended. It should be slightly warm when you are finished.

Walnuts, frozen
Sunflower Seeds, frozen
Sea Salt
Honey
Kelp powder

Blend the frozen walnuts and frozen sunflower seeds in your vitamix until they are creamy. This should take about 5-8 minutes. Scoop the nut butter out and season it with honey and salt to taste. Stir in kelp powder, about 1/2 teaspoon per cup of nut butter. Injoy! This is extra super good with cacao, or bananas, or in a spicy thai peanut sauce (just add water, vinegar and cayenne pepper). I love love love this!

Is there a reason the nuts/seeds are frozen? The thai sauce sounds scrumptious!

I was also wondering why the froozen nuts....also, I just haven't used kelp before, isn't it fishy tasting, if so....why do you put it in your peanut butter...just wondering....thanks!

A tiny amount of kelp somehow adds a peanut-y flavor. Too much kelp, and it tastes fishy.
The nuts and seeds are frozen so that they don't heat up too much when I blend them. My vitamix can get really hot when it blends nuts and seeds.

Do you think it would take just as good if I used agave instead of honey? Or is the honey necessary to make it taste like peanut butter?

Did you make this one up? If so, great job!

Oh, how I was a peanut butter fanatic - it was like my mainstay when I went veggie and than vegan.

It sounds like the nuts don't HAVE to be frozen then? It doesn't effect the taste not to freeze them.

Oh, also do you have any measurements? Paritcularlly for the kelp, I don't want to add too much

I think it would still be good with agave, however; nothing goes as well with peanutbutter as honey, in my opinion. Yes, I made this recipe up. I'm not sure how, but I've been using it for a while and it's good. The nuts don't have to be frozen. It tastes the same using frozen or unfrozen nuts, but I find it easier to use frozen. As for the kelp, if you've got 1 cup of nut butter once you're finished, add 1/2 teaspoon of kelp powder.
