View Full Version : Need coleslaw recipe

My daughter LOVES coleslaw, except when I make it! :( I have tried sooo many different recipes and they just don't ever seem to come out well. Next week I am getting a cabbage, come carrots and an onion. I know these are the base of a good slaw, and perhaps also some green pepper.

But how do I make the dressing? I have tried all sorts of recipes and they always seem to come out tasting either bitter or with no flavor at all.

Daughter doesn't like fruit in her slaw so adding stuff like raisins or apples is no go, although I could do fruit juice. I have tried some recipes that called for apple juice in the dressing but they didn't taste quite right.

Her favorite slaw comes from a Mexican restaurant. It seems to be very lightly dressed. You can not see the dressing at all. In other words, it is not a white, creamy dressing like you sometimes see. So I am thinking it is probably vinegar and oil. And the flavors of the vegetables come through loud and clear.

Any suggestions? Oh, I am also allergic to almonds and pistachios and daughter can't have wheat, gluten, soy and bananas (among other things).

Oh I have one I just love! Just omit the jalapenos, if your daughter doesn't like spicy.

6 cups shredded cabbage or coleslaw mix (since I never use the mix, I also add some shredded carrots)
2 tomatoes, seeded and chopped (I don't de-seed the tomatoes)
6 green onions, coarsely chopped
2 jalapeno peppers, finely chopped
1/4 cup apple cider vinegar
3 Tbl honey
1 tsp salt

Combine all ingredients and mix well. Chill for at least 2 hours before serving. It keeps well in the fridge for a few days. :)

I hadn't thought to put tomatoes in it, or peppers. I might like that but not sure she would. She doesn't like spicy food so much. but thanks!

I make cabbage salad with finely shredded cabbage, finely chopped onion, garlic (goes in everything), lots of dill, ACV, olive oil, and spike. I buy the spike in bulk at Central Market or Fred Meyer's. PCC might have it, too. For those who do not know spike, it's a whole bunch of herbs and a little sea salt. I have used it a LOT in cooking for a long time, and still use it in salads and such. I got my sisters all using it, which means I have to keep taking it by the suitcase full when I go to Germany.

I have heard of Spike but don't have any. Is it anything like Herbamare?

I don't know what that is, but judging from the name it probably is very similar.

I got this recipe from Raw, the uncook book. For creamy coleslaw you'd need:

2 C shredded cabbage
1/4 C shredded onion
1 C shredded carrot
1 recipe of Mayo

to make the mayo:

1/4 C lemon juice
2 C cashews (prob soaked awhile)
3 stalks celery
1/2 C chopped bell pepper
1/4 C onion
2 Tbs parsley
2 Tbs thyme
1/4 C chopped tomato
1 Tbs minced garlic

mix all together in blender until creamy

**I'm not sure how tasty this is since I've never made it, but it's from Juliano and his stuff is really good!

Well, you can always omit the tomatoes as well. But the dressing is awesome! You can suit the ingredients to your daughters tastes. :)

Ooh that one sound good and I have the cashews! I tried his recipe for hummus and really hated it. Haven't tried any since. Will try this. Thanks!

I took some coleslaw to church yesterday and it was well liked. For the dressing I used:

about 1/4 cup of tahini
Juice of 1 lemon
1 TBSP apple cider vinegar (Braggs)
2 cloves of garlic
1 tsp dried dill weed
pinch of salt about 1/2 tsp

I thinned it with a little water because my tahini was pretty think. I ended up with about a cup of dressing. I thought my cole slaw could have used a little more dressing (I had half a green cabggage, half a red cabbage, two carrots and half a red oinion). You may need to adjust the quanity to suit your needs.
