anyone use these greens? i bought some,but other than marinating them or putting them in a smoothie-I'm at a loss. Anyone have a recipe for using sharp greens? (they are similar to turnip greens in flavor)

I think amaranth greens are very mild. I juice them with cucumber and lemon. They are a bit too tough for smoothies or marinating, though it depends upon the variety of amaranth you get (there are hundreds). But I think the juice is really yummy.

I put a few of the small leaves in my salads.

I never tasted them before this year and grew both red and green kinds in my garden due to the enthusiastic writings of some "heirloom gardeneers." Unfortunately they don't do much for me. Maybe they are better cooked.

So I'm just waiting for the grains to develop. Maybe my pet birds will like the grains better than I like the foliage.
