View Full Version : Must make whole meal for 5 in few hours

Some people are comming over for their 2nd raw food course here and I wanted to make zucchini spaghetti and walnut meatballs (just zucchini spaghetti is like water and they would leave starving, in fact last time their friends said, hearing it was going to be vegan, "you better get ready to go to mc donalds after that silly vegan meal") and wanted to make the raw chocolate cake I posted a while ago.

The problem is one of them is allergic to walnuts or something, and there's walnuts in everything I wanted to make.

Can I used pecans in the meatballs and chocolate cake and will it affect the taste or texture a lot?

Or any other ideas for a meal for 5 I can have done quickly without walnuts but with lots of calories?

I've been on a slaw kick lately and if you make a sweet type of dressing, cashews or pecans and dried fruits make it pretty filling.

Anything with avocadoes is filling. Soups come to mind. Wraps might be nice with sprouts and a creamy sauce. Or if you like the puddings made with avos.

I would think pecans could sub for walnuts in anything. I often sub pumpkin seeds for part of the walnuts in my pates. I think that works well, too.

They just called and said they want it just half raw/vegan. So I guess I'll just make less (and my mom will make them the cancer, heart attack, diabetes causing food, they already have some of those diseases). I'm not the salad type and barely have salad 4 times a year. Avocadoes are out too since I need some that would be ready tonight and I absolutely hate the timing issues with avos so I almost never eat those either.

I think I'll stick to my spaghetti and meatballs and chocolate cake plan and use pecans instead.

They're my parent's friends. My parents moved away for work a few years ago and rent me the house but in summer they come about every weekend and in winter about every month and it drives me crazy, I can't wait to move out.

Alissa's carrot pecan burgers are good so you could do something similar to them, just make the meatballs small so they will dehydrate quick. You could add a little italian seasonings for flavor.y Or You could just marindate chunks of portobello mushrooms, and other veggies and warm them in the dehydrator. I love portobellos because they add a nice meaty texture to meals. Whether they enjoy it or not, you certainly will and they can go on dreaming of being as healthy as you. Date nut torte is a quick and easy dessert as well and almonds or pecans work well to sub for walnuts, or just some quick brownies.

Last time they came they had a 100% raw course (raw carrot soup, raw tacos, raw chips and salsa/guac, and raw vanilla coconut ice cream) and they had loved it and said they could eat like that all the time, that's why I was surprised they said they wanted half raw, in fact when my dad called them they didn't even expect it to be raw (they call it vegan) and that's when they said half raw.

The meatballs I make are not dehydrated at all, they are simply walnuts (this time pecans) with a few spices and pressed into balls and it's done. I've just come back from the grocery store for the ingredients for the zucchini pasta and meatballs and will make the chocolate cake but with pecans instead of walnuts.

I just made the chocolate cake and can't even tell a difference with it made with pecans. For a new touch I made a raspberry icing by blending raspberries, agave and coconut oil which I poured over the top of cake.

I'll make the pasta/meatballs soon, it barely takes 20 minutes to do it all.

Well it's over and they absolutely loved the spaghetti and meatballs and the cake, they couldn't believe how good it was. They say they're always afraid it will taste bad and can't beleive how good it is after tasting it. I could barely tell there was a difference at all with the pecans instead of walnuts.

WAY off topic - I just noticed you reached your goal weight - CONGRATS! Would love to see some pics in the before and after section. We see so many of people trying to loose weight it would be good to see the other way too. Again - Congrats.

What do you put in your pecan meatballs? I am having a hard time finding a "meatball" recipe that I like and also one that doesn't need dehydrating since I don't have one yet. If your SAD dinner guests liked them, I'd like to know how you made them.
