I can't figure out how gorgeous past was made with the wide looking past stips. Can you?

An "old fashioned" veggie peeler will work.

He probably squared off the zucchini before using the peeler (or mandolin), so the edges would stay straight.

Yes, a "old fashioned" potato peeler, a good one, with a sharp peeling blade. I have one made by oxo. Not a tool for children to use.

Also have an amazing little tool by xox that makes spaghetti type noodles. Works for matchsticks, too. It looks just like the potato peeler, but the peeling blade has v-shaped ridges.

Found them both in a kitchen supply store at a local mall.

You also have to keep in mind that, if this guy is a true CHEF...culinary chefs tend to have knife skills that most of us "lay people" do not have and also use tools and professional knives that most of us do not own or use. But I agree...a peeler would do it...don't know if they'd come out as nice and even as his but close! I'm sure he took extra care to make them look extra nice for presentation.

For perfect strips, you might want to check out either the good grips oxo Y peeler, serrated julienne (great for wide linguine size veggie noodles), or their swivel peelers. ~ Cathy

I do have one or maybe two cheese peelers around here.

Where do I find Oxo kitchen toys? Thanks. Another excuse to go shopping I suppose.

I even saw at Russell James website, google him, a tool he used to pile his pasta up. It was more like a "mush-mash" pile high thingie and he said he used this metal tool he found I believe kitchen store. I got many of those speciality stores around so another excuse to go shopping. Thanks for helping me spend my hubby's money. Now if I could make some ebay change or dollars that would be sweet. If you sell there, feel to email me behind to keep the site food related only. Always needing tips to jump start years later too (ebay).

To make fettucini like pasta you can chut a zucchini into long strips the width of the pasta you want, like 1/4-1/2 inch, then use either a mandoline or ultra thin slicing disc for a food processor and slice them lenghtwise, you will end up with fettuchini shaped noodles.

Wow, you almost reached your goal weight "gain." Sure hope I'm not in the "gain" mode as haven't weighed in a few weeks and need to do that probably this weekend. I love to do it when I didn't eat the night before and just finished a Turbo kickboxing class.
