I had a craving for samosas and decided to make a super quick version in the form of a samosa flavored pate:
1 cup walnuts
1 small/medium carrot, chopped
2 scallions, chopped
1 T onion, chopped
1/3 cup sugar snap peas, chopped
1-2 T olive oil
1 t coriander
1/2 t cumin
1/2 t garam masala
1/2 chili powder
Hot spices like jalapeno/cayenne/tabasco, optional, to taste
Pinch-1/4 t salt
Process walnuts until fine, add remaining ingredients and pulse just to mix. I guess you could shape these into samosas and dehydrate if you want, but I had it just like that and it was really good.
