View Full Version : What's the deal with Couscous?

I always thought the couscous you buy at the store is a whole grain. I know it doesn't sprout, though, so I'm thinking it's probably not a whole gain. Maybe it's just roasted? And I never see it in any recipe books.

Anybody know anything about this?

Couscous is ground semolina wheat pasta.

have you tried quinoa? it cooks up very quickly too AND you can sprout it and have it raw. very tasty and fun looking to boot!

amranth is an interesting little grain as well, totally sproutable but hard to do because it's teeny weeny small. you can grow it in your garden too, it's nifty.

Cauliflower "riced" in the food processor is just as fast as cooking cous cous and the texture is very similar--and it also soaks up whatever sauce you use. It's my new staple=)
