Tricolor Tomato-Basil Salad - 6 Servings

NUTRITIONAL INFORMATION
1 serving: Calories 130; Carbohydrates 10g; Fat 9g; Sodium 210mg

INGREDIENTS
6 medium green heirloom, yellow, and red tomatoes (about 3 pounds), cut into wedges
1 small Vidalia or other sweet onion, thinly sliced
2 tablespoons balsamic vinegar
2 tablespoons red wine vinegar
1 tablespoon Agave or your Favorite sweetner
1/4 cup extra-virgin olive oil
3 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup loosely packed fresh basil leaves, chopped
DIRECTIONS
1. Place tomatoes and onion in serving bowl.
2. In small saucepan, add vinegars and agave .stirring constantly. whisk in oil, garlic, salt, and pepper.
3. Pour dressing over tomato mixture; sprinkle with basil and toss gently to coat. Let stand 30 minutes to blend flavors. Toss before serving.

Sounds awesome but even if I ate all 6 servings it would still be a tiny tiny meal for me, I try to eat 1000 calorie meals. I'll probably try it anyway as it sounds really good, but I'm afraid all that water will fill me before I get the calories I need, that's what always happens when I make high water content recipes.

Sounds lovely. Makes me want to have a garden so I can grow some of my own heirloom tomatoes!

I have had something like this but it also had green beans in it. Very good!
