I purchased a book by Carol Alt (who I didn't realize isn't vegan:( ). She has a recipe using carrot juice pulp to make make crackers using flax seeds with the carrot pulp (and way to much nama shoyu and braggs :( ) What my question is that she says the crackers keep in the refrigerator for about two weeks. I have never refrigerated my flax crackers in the past and now I am wondering if there is a reason to. I would think they might tend to get soggy in the fridge. Any opinions?

You can just use sea salt instead of NS or BLA -- no need if you don't want the stuff. It's not raw anyways. If you do want it, that's cool too! (But salt works just fine to bring the flavors out)...

And I've never kept flax crax in the fridge. Once they're dehydrated, they're good to go. I can't seem to keep them around for two weeks, although in April I had some and then I was out of the country for about 12 days. When I came back they were still good. They had been in a cool, dark place for the whole time (outside of the fridge).

Hope that helps. :)

I only used the BLA because I had it in the house from before I went raw. Funny thing is that I diluted it about 50% and I cut the amount I used in the recipe to 1/2 of the amount in the recipe and it was still salty!!! I can't imagine what it would have been like if I actually followed the recipe as written. The only good thing I got from the recipe was a ratio of flax seed to juice pulp to use. Next time I will forget the BLA etc, and go with my own spice blend.

Whatever works for you! I hope that didn't sound like a judgment re: the BLA.

If you did a good amount of tweaking and ended up with some tasty crackers, please do share your recipe! :)

Yeah... the only time I keep something in the fridge is if it's not completely dehydrated, like crusts or bread-type things. For crackers that are fully crisp, we store them in an airtight container outside of the fridge...works fine :)

My dehydrator says to store the food in the fridge. I don't know why. Seems like if they were dehydrated they wouldn't need the fridge.

I don't refrigerate mine. In the cupboard they go!
