Hi everyone, kind of a weird request, but I'm looking for VERY simple recipes (just a few ingredients) primarily made of vegetables (with no nuts). I'm putting together just a few recipes to share with some friends and their kids and as I look over my list I have a lot of fruit and nut recipes, but not too many veggie/nutless ones. My idea is that the oridinary household has many of the ingredients necessary to whip up healthy snacks for their kids, they just don't realize it. Any recipes come to mind that the average person with no raw experience could make and enjoy??

Zuchini Pasta Marinara
Grate peeled zuchini to make "spaghetti"
Make marinara sauce by blending tomatoes, olive oil, herbs, sundried tomatoes and salt in the FP.
Honey - Glazed Carrots
Thinly slice carrots. Massage the carrots with sea salt, lemon juice, honey, olive oil and chopped parsley. Allow the carrots to marinate until soft.
Also, another way to get veggies in is to use them as "chips" for a raw nut or seed based dip.
Salads are RAWonderful, too, of course :) .

I like to wrap sprouts, strips of avocado, and finely grated carrots (and/or zuchini) in raw nori. Especially good if the filling is spritzed with Bragg's and sprinkled with nutritional yeast. You can also use big leaves like outer Romaine or even collards.
I like sweet potato pudding. Just blend some cut sweet potatoes with soaked dates, honey or agave and a dash of cinnamon. You can also add in baby coconut meat if you like it. My daughter doesnt like coconut but I love it in mine. I think I saw a recipe somewhere for mashed sweet potatoes as well.

Smoothies: 2-3 fruits + ice
Freezer pops: pureed fruit + cut-up fruit in dixie cups & sticks
Pudding: 2 fruits pureed, serve with spoon. Strawberry/mango is a good one.
No blender? mash banana and peach, mango, or papaya with a fork. This will freeze great, or be good as-is!
Guacamole in lettuce cups with cherry tomato garnish
Carrot/raisin salad
Waldorf salad: apples + celery + walnuts + orange juice
Ambrosia: chunks of orange & grapefruit + coconut + pecans
Frozen banana on a stick

I've found kids always like cut up vegetables and fruit.

I hesitate to call this a "recipe", but I love taking corn right off the cob, dicing a red pepper and zucchini, little bit of avocado (to give it some fat) squeeze on some lemon juice, a little evoo and some parsley. Very simple, very refreshing, and very good!
