View Full Version : i finally got dates! what to do with them??

i wanna use these babies in whatever recipe i can :) they taste so good and im guessing i can make a scrumptious dessert out of them some how. i dont have a dehydrator, remember...so its gotta be kinda simple. ive got other ingredients though so do tell all mighty experienced ones :):) (haha)

Sometimes I just pit one and stick a nut in it. It's like a peanuet butter jelly sandwich- yum!:)

I second this as well..I especially like to stuff them with as many pecans as will fit. I'm not too fond of a lot of date dessert recipes. I do like one in Alissa's caesar dressing. But so far, they are best plain with a pecan inside--you'll be amazed how much it tastes exactly like pecan pie.

mm! dressing! can i have that recipe? sorry for yanking your time for recipes, but as i said idont have the book yet gah. its really held me back :-p

if you have a sweet tooth from hell, like I do..

stuff a pecan or some almond butter in there and dip in melted raw chocolate sauce.....omg:D

RP's brownies

1 cup walnuts (unsoaked)
1 cup dates (pitted unsoaked)
1/4 cup cocoa powder (you may use carob if you like)

Place in food processor, and blend until well blended; should still be dry and chunky, appx 30 seconds. Press into a small springform pan. Refrigerate until you can insert a knife and it isn't too sticky.

Cut into little pieces, then place in plastic baggies and freeze.

They can be eaten fresh from the fridge or from the freezer.

(Note: Sometimes you have to add a teaspoon or so of water so they stick together. You can also form them into balls and then roll them in raw
coconut.)


I also second stuffing a nut inside one. I like a pecan in a date, its like a mini pecan pie.

Alissa's date nut torte is delicous and I think the recipe is floating around here or it was on her website. I like to make my pie crusts with them and some type of nut or make a pudding and sprinkle with a nut/date mixture (you put it in the fp and mix until it's chuncky. Enjoy your delicious dates....Personally I just like them plain....I know my taste buds have changed but sometimes they remind me of carmel.

you can use them when you make your own almond milk:

blend together 1 cup of almonds with 3 cups of water
strain with a nut milk bag (or just a piece of cloth)
pour milk back into blender & add in 2 pitted dates
Blend like there's no tomorrow, taste & add more dates if needed.


There is also this AMAZING recipe: (the dates are in the filling & you can use the left over almond pulp to turn into almond flour for the pastry)

Cinnamon Rolls

Pastry:
1 c. oat groats, ground into flour (WARNING: These are NOT truly raw, they are steamed! If you want, you can sub with all almond flour with maybe a little ground flax or sprouted/dehydrated wheat berries or order truly raw oats from Alissa's website!)
¼ c. ground golden flax seeds (unsoaked)
2. c. dehydrated nut pulp, ground into flour (nut pulp is the stuff you have left over after blending and straining nut milk)
¼ c. olive oil (or other light oil)
A drizzle of honey or agave nectar
Dash of sea salt
Water – added 1 TBS. at a time to help it turn over and until it becomes a soft, workable dough (exact measurements to come!)

Mix the two flours together and set aside approximately ¼ cup of the flour. Process the ingredients in food processor, adding a little water at a time to get it moving. You want this to be a dough-like consistency and not too watery.

Form into a ball, gently knead the dough and roll out using rolling pin and some of the flour you set aside. Roll out thin. TIP: Make sure the dough isn't too stiff when you take it out of the processor...kinda like a really thick batter. Plop onto some unbleached parchment paper and let it rest for about 10 minutes and it will be more workable. I like to roll the dough out ON the parchment paper so that when it's time to roll it up, it's easier and not sticking on the surface.

Filling: (Note - if you don't want to use the nuts, you don't have to. Just blend the filling ingredients and spread on the dough before rolling out)

½ c. dates
1 ½ c. of pecans and/or walnuts (I use both – however, nuts are optional)
¼ - ½ tsp. sea salt
½ c. raw honey or agave nectar
2 Tbs. cinnamon (or more to taste)

Pulse chop the dates and nuts in food processor. Remove to bowl. Add remaining ingredients and mix well. Spread evenly on the rolled out dough. Roll up in jellyroll fashion and slice ½” thick rolls. Place on teflex sheet and dehydrate until warm. Top with frosting (below). Can be stored in refrigerator and warmed in dehydrator later!

Frosting:
3 TBS. honey or agave (or more to taste)
3 TBS. orange juice or lemon (for more of a “cream cheese-type” frosting) – Add more if needed to make it smoother or more of an icing to drizzle
1 c. cashews (I prefer soaking them)
Dash of sea salt
¼ - ½ tsp. vanilla

Blend all in blender or food processor (blender will make it smoother) until creamy and smooth. For a thinner icing to drizzle, add more orange juice.

If you have a food processor, process some form of nuts and dates together until like a moist crumble. You may add anyting you like to this mixture. I like to add different extracts, different dried fruits, ect. Anyway, you can roll these up and roll in coconut, or just use your imagination. I like to add dried apple slices chopped fine, cinnamon, agave and macs then flatten in a pan and refridgerate until cut-able. These taste like apple pie to me!

i made the choco cake and it was ammaaaazing. im not very fond of choclate but knowing its raw is whats so appetizing

an alissa recipe -

half raisins , half walnuts . grind coarse in blender .
press into bottom of pan .

then say a cup water , 8 dates , juice of half a lemon .
blend til frosting like , frost nut / raisin mixture . chill / chow :D

* the lemon / date frosting makes it !

I posted this in my blog :)

4 cups carrot juice (about 16 carrots)
1 c raw sweet potato, peeled and cubed
4 dates, pitted
1/2 avocado, pitted, sliced
1/2 tsp pumpkin pie spice (I use 1/4 tsp since a lot goes a long way:)

Place all ingredients in a blender & blend until smooth. Enjoy or store in an airtight container for up to 36 hours.
