View Full Version : Spaghetti Squash w/ Alissa's Marinara Sauce

:p YUMMY!

I just made the most wonderful batch of Alissa's Marinara Sauce. I put some fresh Parsley and Fresh Oregano in it and honey instead of dates along with the rest of Alissa's ingredients. It is divine! The last batch I made I don't know what I did wrong, it was strong on the tomato side (I guess too many dried tomato's?) :eek:

Anyway I was just searching threads for Spaghetti Squash and how to use it. The threads didn't give me much to go on so I just cut it in half, scrapped all the seeds and goop out and started cutting out pieces from the inside out. I then started pinching it apart and it came apart nicely. I marinated it in olive oil and garlic powder while I made up the Marinara Sauce.

I am not a fan of zucchini as spaghetti but this Spaghetti Squash is awesome! It taste like pumpkin which I LOVE! I think I just found my new favorite staple. HA! :D

Oh how I wish I liked tomatoes. I tried to make the marinara...and I couldn't even taste it because just the smell of the raw tomatoes almost killed me. It sure looks yummy though! The funny thing is I like salsa, ketchup, cooked marinara, I just don't like fresh tomatoes.

Angie, I have tried spaghetti squash a couple of times. I think it is okay. I am glad you like it so much. I basically did the same thing as you. A little olive oil and salt to soften and flavor and then topped it with a sauce.

Well I'm the opposite to you. I have always hated lasagne, spag bog, and tomato based pasta sauces although tomatoes in salad didn't worry me. I was a bit hesitant to make the marinara sauce but I absolutely love it? Go figure. :)

I have a friend who is allergic to tomatoes, such as a substitute - red bell pepper is used. You may desire to try that.

I tried this with a spaghetti squash recently and it didn't turn out well. I suspect that my squash was very old, though, and may try it again with a fresh one sometime. I'm finishing my latest batch of sauce right now with some spiralized zucchini. Next time I'm going to use carrots and beets too, for a green/white/orange/red multi-colored pasta effect. I find that sprouted lentils plopped on top work really well, too.

Here's one you can try instead of tomato sauce:

Alfredo sauce - my varation from "RAW POWER"

2 C macadamia nuts
1/2 C pine nuts
2 T lemon juice
garlic powder to taste (a small dabble in my palm)
1 1/2 C water (as needed)
1-2 tsp salt
dried rosemary
cracked pepper to taste
dried dill weed to taste (sometimes I don't have, comes out fine either way)

Blend till smooth. A food processor would probably work best but I only have a vita mix and I manage just fine.

I brought this to a pot luck and people raved about it. I LOVE it!

Forgot to mention, I like to put black greek olives ontop.
