Alissa's burger buns...can I sub for the carrots?

Just wondering if there is another vegetable that could be subbed for the carrots? Would something else work? We just love these here, but my son can't do carrots anymore.

Beets? Zucchini? Celery?

Can you son do any other types of root such as daikon or parsnip, or maybe even jicama, etc.? Perhaps try with one of those if so. If not, as Veganforlife suggested, zucchini may work although I usually use zukes in the place of the mushrooms since I do not like mushrooms. I'm thinking the carrots add something to the texture of the 'burger' so again, try subbing with something similar in texture if your son can have them.

What about sweet potatoes? I love them raw and shredded in stuff. I prefer them to carrots.
