I had a raw burrito in a restaurant and they used collard greens for the wrap. I decided I would try the collard greens for my mock salmon. However, I can't quite figure out how to get it to stay rolled up and not leak. At the restaurant it held together beautifully. Any tips on wrapping/rolling these would be appreciated. Pics would be a plus. I have assumed that you have to cut off the tough part of the stem.

Yes, cut off the stem and what I personally do is start to roll it, like fold a third of it, then fold in both sides just a smidgeon, then continue rolling up.
