you can steam veggies and its still raw right? and if you eat eat say fresh or steamed squash vs. grilled squash what is the unhealthy difference here aside from more nutrients being cooked out of cooked veggies.

Once you heat any food past 118 degrees (some say 105 degrees) it is not raw anymore. It is cooked. The higher the temperature - the more loss of nutrients and enzymes.

One of the reasons for eating raw IS because of the nutrients. You lose those, as Tracy said, when steaming/baking/cooking anything over 118 degrees.
